Olivier, I think you still don't get it.

Imagine this scenario:

- visitor hits your site, www.mysite.com/page1.html
- this hit is logged in your logfile. You can even see where she came from.
- visitor clicks a link on this page1.html which points off your site, say to www.some-other-site.com/page2.html
- that is NOT logged in your logfile. It is
logged on some-other-site.com's logfile, but that's no good to you, you don't have access to it.

If a visitor leaves your site, all you can see is that they disappeared from page1.html on your site, not where they went.
